Gilbert was living with his parents in the 1870 U.S. Census, and he was "working on a farm." He married Ida May (Chapman) Kitchen (born c.1857) on 13 Feb 1877 in Berkeley County, West Virginia. She was the daughter of J.A. and E. Chapman.

On 7 Mar 1895, Gilbert's parents, Bethuel and Mary, deeded the ‘Robert K. Robinson farm' (south of Jones Springs) to him for $1.00, and for the further consideration that Gilbert is charged $3000.000 in the distribution of the estate of Bethuel at his death. Gilbert was living in the house at the time. Three years later, Gilbert Kitchen and his wife, Ida, sold the ‘Robert K. Robinson house' and 262 acres to Robert Tilbery Files.

In the 1900 U.S. Census, Gilbert and Ida lived in Martinsburg, Berkeley County, WV. In the 1920 U.S. Census, Gilbert still lived in Martinsburg.

Gilbert and Ida were the parents of Harry Chapman Kitchen (19 Nov 1877 - 12 July 1957), who was born and died in Berkeley County, West Virginia. Harry [1st] married Martha (Thomas) Kitchen ["Mattie"] (12 Mar 1878 - 12 Feb 1926). He [2nd] married Mary E. (Warren) Kitchen (born c.1895) on 16 Jan 1930 in Martinsburg, Berkeley County, West Virginia.
