On 2 Dec 1861, Joseph enlisted in Co. I, 1st Maryland Cavalry. He was mustered out on 5 Oct 1863. He is listed in the 1890 Special U.S. Census, Enumeration District 61, Gerrardstown, as enlisting in Nov 1861 and serving as a Private in Co. G, 1st MD Cavalry. In 1890 and 1895, Joseph lived in Jones Springs, Berkeley County, West Virginia.

Joseph [1st] married Mary C. (Gano) Kitchen (22 Aug 1842 - 27 Mar 1909).

In the 1870 U.S. Census, Joseph and Mary were living in Gerrardstown, Berkeley County, West Virginia. In the 1880 U.S. Census, Joseph and Mary still lived in Gerrardstown. In the 1900 Census, Joseph and Mary lived in Gerrardstown, and their son, George Henry Kitchen, lived two households away.

In the 1910 Census, the widower Joseph was boarding with his daughter, Mollie (Kitchen) Stuckey, and her husband, Jacob, in Gerrardstown, along with his son, Clayton A. Kitchen, and his widowed sister, Melvina (Kitchen) Grantham.

In the 1920 Census, Joseph was still living in Gerrardstown and he was "retired." He had [2nd] married Henrietta (Riner) Kitchen Butts (1891 - 1959) on 26 Nov 1913 in Shanghai, Berkeley County, West Virginia. She was the daughter of Robert Riner (born c.1864) and Eliza Catherine (Kees) Riner (born c.1855). Henrietta [2nd] married Harland Page Butts on 21 Sept 1927.
