Achilles Jackson Eubank was born July 31, 1758 in Goochland County, Virginia to Richard Eubank and Polly Bush. He is a Revolutionary War veteran, having enlisted five times between 1777 and 1781, serving a total of about 19 1/2 months. His Revolutionary War pension records state he was present during the siege of Yorktown, Virginia and the surrender of Lord Cornwallis on October 19, 1781, ending the Revolutionary War.

Between his third and fourth enlistments, Achilles married Mary Polly Bush in Bedford County, Virginia on July 19, 1779. Together, they had six children: Ambrose B, Milly, Stephen, Elizabeth, Polly, and Frances.

Sometime prior to 1787, the Eubank family settled in Clark County, Kentucky where Achilles eventually obtained 282 acres of land. In 1812, Achilles built a large brick house on the property, which today is still wonderfully well-preserved. The Eubank Family cemetery is also located here. In 1979, the house was listed on the National Register of Historical Places under National Register Information System number 79003577. It is located at 37.907094 North, 84.210353 West.

Shortly after the Eubanks arrived in Kentucky, Achilles joined the Kentucky militia, which came to be known as the Cornstalk Militia. Achilles served with the 17th Regiment from 1793 and was commissioned as a Major in 1799. Son Ambrose also served in the Kentucky Militia.

Achilles was also an attorney and represented Clark County in the Kentucky Legislature from 1799-1800.

On February 4, 1830, Achilles' wife of nearly 50 years passed away in Clark County. He eventually moved to Cooper County, Missouri where he met Nancy J. Ware. At the age of 79 years he married Nancy on August 13, 1837. There are conflicting accounts of Nancy's age when she married. The marriage record identifies her as 27 years of age, but her headstone states her birth as 1814, which would make her approximately 23 years of age.

Achilles passed away August 16, 1844 in Cooper County, but not before having an additional six children with Nancy. Those children are Achilles Jackson, William Thomas, Richard, Joseph James, John Robert, and a daughter who passed in infancy.
