Jensine was born in Vemmenæs, Bjerreby sogn, Sunds herred, Svendborg amt., Island of Taasinge, Fyn, Denmark. She is the daughter of Jens Jensen Græs (Grass) and Karen Pedersen. During her childhood she lived in Vemmenæs, Denmark until coming to America with them at the age of three in 1888. After arriving in America, the family went directly to Owatonna, MN to reunite with Jensine's two older siblings that came in 1887. Jensine lived the rest of her childhood in Owatonna, MN. She was also known as Jensena.

Jensena married George Jacob Schafer, son of Jacob M. Schafer and Elizabeth Butsch, on Oct. 10, 1906. They had one son, John.

Jensena died in 1945, but the service date at the cemetery is June 1955. Jensena was preceded in death by her parents, brother; Christen.

Jensena was cremated and is in the same mausoleum at, Wisconsin Memorial Park in Brookfield, WI, with her son and daughter-in-law.
