Sarah "Rice" Copsey was the 2nd wife of Charles Colbert Copsey. She was the daughter of Ezekiel Rice and Elizabeth Miller, and was born in Kentucky. She later moved to Iowa and then to California with her sons Abraham Rice Kouns and Jacob Rice Kouns and her two daughters Marinda Kouns Spencer and Francis Campbell.
She married Abraham Kouns on October 27, 1827 in Greenup County, Kentucky and they had the following children:
1. Jasper Kouns abt. 1830
2. Jacob Rice Kouns 1835 - 1897 died in Siskiyou County, California
3. Ira Kouns abt. 1839
4. Marinda Kouns Spencer Burger 1841 - 1928 buried in Hartley Cemetery
5. Abraham Rice Kouns 1843 - 1919 buried in Lower Lake Cemetery
Sarah then married George Campbell on October 20, 1849 in Kentucky following the death of her first husband, and George died in 1850. They had one child:
1. Frances D. Campbell Hale 1849 - 1914 buried in the Middletown Cemetery
On May 21, 1854 Sarah married John Parkinson in Fremont County, Iowa.
Finally, she married Charles Colbert Copsey on July 15, 1863 in Lake County, California where she remained until her death. Sarah and Charles both had children by previous marriages, but there were no children from this union.

Mrs. Sarah Copsey, widow of the late C.C. Copsey, a pioneer of Lake county and the step-mother of Coroner S.A. Copsey, died at the residence ot her daughter Mrs Spencer, near Lakeport, last Friday. She had reached a ripe old age, honored and respected by all she knew her. One remarkable thing in her last illness, was her long fast. She was sick 72 days, the first seven of which, she took a little nourishment but after that not a bite of food of any description passed her lips, thus fasting for 65 days. So far as we know, the longest fast on record without nourishmeant of any kind, drinking only a very little water during the time. Dr. Thornton, who attended her, kept a correct account of the time she went with out food.

Inscription: Sarah wife of Charles C. Copsey died Oct. 29, 1887 aged 77 Years. Erected by M. & A. K. Spencer. (this is her daughter Marinda Kouns Spencer and her grandson Abraham Kouns Spencer).
