Eithel was the eldest daughter of George Washington White (b.1856,OH) and Sarah Jane (Clark) Paulk (b.1858,OH). Following are excerpts from a Bio written by Eithel's daughter-in-law, Virginia (Clafflin) Gillaspy.

In 1906 Eithel married Robert Marshall Gillaspy. Their first baby, a girl named Goldy, passed away at the age of six months.
Robert went into cattle and farming full time. He continued in this same business until he died in 1935. Eithel and the rest of the family stayed on the farm together until 1937. Eithel then sold the farm and moved to Anthony, Kansas where she lived . . . until 1946. She then sold her house in Anthony and moved to Coeur d'Alene. She enjoyed the scenery, mountains, lakes, and tall timber very much along with the company of her grandchildren. She always managed to have cookies or something baked when they came to visit. Eithel also enjoyed raising a garden and flowers that grew so well in the Idaho mountain climate.
In 1952 Eithel found that she had a heart ailment and was warned by her doctor to move to a lower altitude. By this time she had five of her children married with 12 children between them. They all lived in Idaho so she hated to leave them.
She finally decided to move back to Kansas and put her house up for sale. In the spring of 1953 she was stricken with a heart attack and passed away in her home. She was returned to Oklahoma and buried beside her husband at the Rosedale Cemetery west of Manchester.
