She graduated from Ansonia High School with honors and attended the University of Connecticut, where she graduated with her degree in foods and nutrition in 1943. She was invited to complete a fifth-year student dietetics program at Walter Reed in Washington, D.C.
Betty subsequently enlisted in the U.S. Army, serving from 1944 to 1946, including a two-year tour of duty in the Philippines during and after World War II.
After the war, Betty then worked for the State of Connecticut's school lunch program for one year, prior to continuing her education at Iowa State University in Ames, Iowa. At Iowa State, she completed her master's in Institutional Management in 1949.
It was during Betty's time at Iowa State that she met Arthur Stringfellow and the two were married on Aug. 27, 1949, in Ansonia, Conn. Art preceded Betty in death, passing away on Jan. 21, 2006, in Peoria.
Betty and Art had three children, Steven James, Ray Charles and Dr. Grace Stringfellow, M.D..
Betty volunteered her services as a dietician at the Heartland Clinic. She was also very active in the American Dietetic Association and Home Extension Unit IV.
Funeral services for Betty will be held on Thursday, Sept. 2, 2010, at 10:30 a.m. at Crossroads United Methodist Church, with Pastor Tom Goodell officiating. Visitation will be from 5 to 8 p.m. Wednesday at Mason-White Funeral Home and 30 minutes prior to services at the church. Cremation rites will be accorded following services Thursday. Burial of ashes will be at a later date at Camp Butler National Cemetery in Springfield.
