Son of Bernard and Helen Meister Knievel and attended Guardian Angels Catholic School. Ed farmed with his father until he served in the US Army from December 12, 1950 until December 11, 1952. Upon his discharge, he returned to farming. On May 11, 1957, he married Edna Goeken at St. Mary's Catholic Church in West Point. The couple farmed east of town the remainder of his life.

Ed was a member of St. Mary's Catholic Church, VFW, and Knights of Columbus.

Survivors include his wife, Edna, of West Point, son Dale (Joy) Knievel of West Point, daughters Susan (Cory) Bockelman of Pierce, Bonnie (Del) Styskal of Wisner and Carol (Mike) Polacek of Fremont, sisters Mary Ann (Spencer) Smith of Colorado Springs, CO, Henrietta (Arthur) Grewe of Casa Grande, AZ, and Sister Angelita Knievel, OSF, of Manitowoc, WI,brothers Rudy (Alice) of Colorado Springs, CO and Paul (Audrey) of Omaha, grandchildren, Chris, Jackie, Patrick and Ashley Knievel, Brandon Stange, Dustin, Erica and Trevor Styskal, and Kaitlyn Polacek. He is preceded in death by his parents, brothers, Thomas in infancy, Leo and Jerome and sister Dorothy MacInnes.
