In 1875 Sarah and her family came from Florida to Galveston TX via boat. From Galveston, they rode a train to Luling and then hired a man with a wagon to take them to Wilson County where they settled near the Cibolo River. Sarah's husband, TS Simpson was instrumental in the building of the Wilson County Courthouse in 1884 and his name is found on the Cornerstone of the courthouse. He was County Commissioner at the time the courthouse was built.

After TS's passing, Sarah married Augustus A Appling on 4 Jul 1894. They remained married until his death on 18 Aug 1907. Augustus is buried at Stockdale Cemetery next to his first wife. Sarah was found living with her son, John in 1910 and with her daughter, Fannie Simpson Donaho in 1920.
