Paul Basilio, who made one of Central New York's best-known Italian sausage brands for 61 years and was the longest-serving vendor at the New York State Fair, died Wednesday. He was 92.

He was a member of a big and prominent Italian-American family — one of his brothers was former boxing champion Carmen Basilio, who died in 2012.

Basilio operated the company initially known as Carmen Basilio's Sausage, and later Basilio's Sausage, starting in 1956. It opened in Syracuse and later moved to Canastota. After six decades, he sold it to two nephews. Now known as Basilio-Buda Sausage in Canastota, it is owned by Debra Golden and Paul's nephew Vinny Salamone Jr.

Basilio's Sausage is the second-oldest food stand at the State Fair (after Baker's Chicken Coop). When he retired from the Fair in 2018 9at age 90), Paul, or Paulie, Basilio had been working his stand longer than any other concessionaire.

There wasn't even a close second for that title, State Fair Director Troy Waffner said in a 2018 syracuse.com story on Basilio. Basilio had the longest tenure at the Fair "by a long shot," Waffner said.

Basilio was a fixture at his stand, bustling around the tables, swapping stories and bantering with customers. It's likely he sold the Fair's first-ever sausage sandwich.

"Paulie was one of a kind, an old-school character and an icon of the Fair," Waffner said today. "I remember finding him doing repairs on the roof of the stand one day, and he was well into his 80s by then. When you think of the Fair, one of the things you think of first is a sausage sandwich. Paulie and his family are a big part of the reason for that. We will miss him and we send our heartfelt condolences to his family."
