Phyllis Maryanne Knight passed away Tuesday, September 18, 2018 in Yakima, Washington. She was born on April 11, 1938 in Portland, Oregon to parents Phillip and Ann Piazza. She had a brother, Phillip (Bud) Piazza, and a sister, Nadine (Mead).

Phyllis attended St. Andrew’s grade school and Immaculata High School in Portland, where she graduated in 1956. She met her husband-to-be, Roger Knight, in 1956 and were married in 1957. They had their first son, Eric Michael, in 1961 and their second son, Jeffrey Scott, in 1963.
In 1964 they moved their family to Yakima, where Roger took a job as a printer at the Yakima Herald-Republic newspaper. At that time Phyllis began working at Yakima Valley School in Selah, WA, working with the developmentally disabled. During that time, she obtained her Accredited Medical Records Technician license. She started her own consulting business auditing nursing home records. She left Yakima Valley School in 1981.
In 1980, Phyllis and Roger started a mini donut concession business, traveling around the Northwest to a variety of festivals.
In 1986 they were able to quit their jobs and fulfill their dream of moving to Ocean Park. Roger and Phyllis became very active in the community becoming members in Ocean Park Chamber of Commerce, Beach Barons Car Club, and the Kite Festival Committee.
They took an active roll in helping with vendor organization in many of the community activities up and down the Peninsula.
While participating in local events, they became known as “The Donut Man and Woman”. They were best known for their small hand-built trailer at these events. They happily served many families over their 19-year career in the donut business.
In 2001, they retired from the donut business and proceeded to wear out 3 motor homes on their many cross-country trips.
Phyllis is survived by her sons, Ric (Ronda) Knight of Yakima and their 3 sons, Jason (Tammy) of Citrus Heights, CA, Jeffrey (Janette) and great-grandson Cameron of Yakima, and Alex (Grace) also of Yakima; Jeffrey (Shelly) of Battleground, WA and their children, Megan, Brandon and Andrew also from the Vancouver area. She is also survived by numerous nieces and nephews.
Phyllis took great pride in her family; her sons, grandchildren and great-grandchild. Nothing made her happier than to brag on her grandchildren. She will be greatly missed.
A Celebration of Life potluck will be held on Saturday, October 13th from noon to 3 pm at The Beach Baron’s Club House at 255th and Sandridge Rd.
