Mrs. Goodnight was born December 4, 1924 in Ripley, New York to Harold Eimers and Lillie Cowsert Eimers but was relocated to Bartlett, Texas as an infant and raised by her aunt and uncle, Beatrice and Homer Roberts. She moved to Temple in the early fifties where she resided for over 65 years. As a member of what is now referred to as the "greatest generation", Ellen was raised as a child during the great depression, and in her teens saw the onset of World War II. She met the love of her life, Lester Goodnight, prior to the war. They were married December 19, 1941. They started their family in 1944 just before his deployment overseas. After the war Lester and Ellen moved to Temple where they raised their three children. Her main occupation in life was that of wife and mother. She enjoyed crafts, quilting, sewing, and jigsaw puzzles into her nineties and was an active member of St. Paul United Methodist Church. She saw a lot of changes in this world but she was always a constant. To the people she knew she was always a friend. To her grandkids she was always Grandma. And to her three kids, well, she was just Mom.
She was preceded in death by her loving husband of 60 years, Lester G. Goodnight, by her parents, sister, Marguerite Averill and granddaughter, Krista Jackson. Survivors include one son, Gary Don Goodnight and wife, Peggy of Belton and two daughters, Karon Jackson and husband, Kenneth of Hawesville, Kentucky and Emily Goodnight of Temple, five grandchildren, Bryan Jackson and wife, Melissa, Marla McFarling and husband, Ernie, Gregory Jackson and wife, Tera, Casey Rhea and husband, Jason and Marcus Goodnight and wife, Lindsey, nine great-grandchildren and three great-great-grandchildren.
