Szymon was born 3 Dec 1864 to Andrew Polek and Helen Kuc in Lipnica Murowana, Galicia (the Austrian partition of Poland). He immigrated to America with the rest of his family around 1886-1888. He became a naturalized citizen on 14 Aug 1893.

He married Franciszka Bejenka 10 Nov 1890 at St. Mary of Perpetual Help Church, Chicago, IL. They had six children, but only four lived past childhood. Szymon worked as a butcher and at the Union Stockyards

Szymon died on 19 July 1904 from an accidental gunshot wound in Chicago. His wife Franciszka later married a second time to Anton Kardasz.
