In 1890 he established a new congregation and church in Waterloo. In 1911 he assumed charge of St Mary's parish in Berlin for four years until his health started to fail. In 1916 he completed his history of "The Catholic Church in Waterloo County", a work that culminated from years of research. He was a member of the executive of the Children's Aid Society, involved in the Waterloo Historical Society and played an active role in the management of the Mt Hope Roman Catholic Cemetery known as St Mary's Cemetery in 1912.
Rev. Spetz suffered a stroke in September 1921, was taken to St Joseph's hospital in Guelph where he gradually weakened until his death on December 1 later that year.
