Elizabeth Epper Schaefer was from Bettenberg or Bitburg, Tier, Germany. She is the daughter of Philipi Epper and Clara Jutz.

She immigrated to America at age 8, Departed from Antwerp, Belgium aboard the American Bark (Ship) Sea Duck and arriving in New York on 16 November 1853. Passenger list includes her mother Clara 34 and siblings Adam 10, Elizabeth 8 and Philip 6. Possibly also Uncle Adam Jutz.

She married John Peter Schaefer on June 21, 1866 in Swan Lake, Nicollet County, MN. Elizabeth and John Peter had 10 children: Mary Katherine, John Peter, Adam, Phillip, Rose, Angela, Leo, Ludwig, Elizabeth, and Anne.

She outlived her husband by over 20 years and lived with various children in her later life.
