Elizabeth "Eliza" Tennessee (Abbott) Jones was one of 10 children born to James Joseph Abbott and Sarah Ann Smith, four girls and six boys. She and all of her sisters were named after the United States of America, the oldest being Louisiana, then Arkansas, Tennessee, and California being the youngest. She was known as Tennessee Abbott during her formative years; however, she began identifying as Eliza after she became an adult. Her brothers were Danial J, John, Wesley, Samuel "Sam" Horace, James "Jim" Joseph Jr, and Thomas Franklin.

Eliza married John Madison Jones. They lived in Tyler County, Texas where they raised 8 children.

After 1920, she moved in with her youngest son, Thomas Jefferson and his wife, Opal, and is listed as Mrs. John Jones on the 1930 census in Beaumont. After Tommy and Opal's family began to grow, Eliza went to live with her daughter, Ola Florence Carson, in Pearland, Texas. She died in a Houston hospital of Bronchial Pneumonia.
