After spending too much time on research, I can urge you do not confuse her with a woman of the same name who married tap room owner Abel J. Striffling. His death certificate names his wife as 65 year old Josephine Eichenhofer, and in 1943 Roxborough, it is hard to believe there was another lady in her 60's with this same name, but there was.
Our Josephine was dead by a few months at the time of Abel's passing while his Josephine was alive and noted on his death certificate and is with him on several censuses. You can see her, before her marriage, on the 1880 census where she lived with her father Richard and mother Rosania and her siblings. You can also see her, deceased, on her death certificate from 1963. And just to confuse us further, Abel's Josephine Eichenhofer Striffling is in the very same cemetery as my Josephine Merkert Eichenhofer's Merkert family, a last laugh.
