George was the son of John Adam Hellmer and Agnes Andres, both of Bayern, Germany. His siblings were Henry Edwin and Francis Joseph.

He first married Anna M. Shields, on June 2, 1897 in Butler, Missouri. Their two children were Maria Agnes and Frank Joseph.

After Anna's death in 1902, he then married Mary Helen Strutzel on May 11, 1904 in Olpe, Kansas. Their children were Joseph Adam, Mary Anna, George Anton Jr., Leo Aloysius, Martha Frances (wife of Orland Eugene AKERS), Theresa Alice, Clara Elizabeth, Edward John and Gilbert Frederick.
