He was age 54 in the 1870 Pennsylvania census, and age 63 in 1880, born in Ireland, so he was born about 1816-1817. He was 76 when he died in Feb. 1892, so was born about 1816.
The biography of his son Robert H. Latimore in the Westmoreland Co., PA, biographical/historical book (1890) says that John was born in 1815.
"John Latimore (father) was born in county Tyrone, Ireland, in 1815, immigrated to the United Stales and settled in Sewickley township, Westmoreland county, Pa., where he owns a good farm on which he lives, and also engages in stock-raising. He married in 1837, Mary Ann Armstrong and they have seven children .... "

John's 1837 marriage to Mary Anne Armstrong was reported in The Belfast Newsletter. The notice said that he was "of Tamag," but there's no townland of that name in County Tyrone, or in all of Ireland.
However, there is a TUMMOG or TOOMOG townland in Donaghmore parish. Obviously that was his home place.
The Tithe Applotments of 1826 show "Robt. Lattimore" at Tummog, Donaghmore parish, Co. Tyrone.

MARRIED -- On the 24th inst. by the Rev. Joseph Acheson, of Castlecaulfield, Mr. John Latimore, of Tamag, to Miss Mary Anne Armstrong, daughter of Mr. James Armstrong, of Croskevenah.

In the Tithe Applotments of 1826, Robert Latimore was farming at Toomog -- almost surely John's father. That may be the townland where John himself was born about 1816.

John and Mary Anne and their younger children emigrated from County Tyrone to Pennsylvania in 1869; the older boys emigrated separately from their parents. John established a farm in Sewickley township in Westmoreland County, PA. His real estate was valued at $12,000 in the 1870 census -- quite a substantial farm for an Irish emigrant. John and Mary Anne lived the remainder of their lives in Sewickley township, Mary Anne dying in 1889 and John in 1892.
