I've figured out who her parents are based on the 1850 census which includes her widowed mother (listed incorrectly as Widow William Campbell) along with sibling Georges age 19; Louisa, age 17; Celeste, age 13; Nelly, age 11; and Elizabeth, age 8. All living in St. Landry Parish.

Researching her siblings I found the following baptism and/or marriage records naming the parents (all entries from Southwest Louisiana Records CD 1750-1900 by Rev. Donald J. Hebert):

I was finally able to find Elizabeth's baptism record as well although it was mistakenly listed under Campbell:
