The M. initial on Hester's gravestone is in reference to her maiden name of McArthur and not her middle name since her middle name was Ellen.
I have seen this happen every once in a while in my years of work on FAG studying gravestones. Some women, or their family, choose to have the maiden name of the woman who died put onto the gravestone where the middle name would go and you have to do a bit of research to make certain if that really actually was their middle name or their maiden name.

Graveside services for Mrs. Hester M. Brennan, 73, of 1206 South Tenth East, Salt Lake City, who died Thursday, will be conducted at 10 a.m. Monday at Cloverdale Memorial Park, under direction of Gibson Funeral Home.
She was born Nov. 21, 1900, in Oregon. She married Francis T. Brennan. He worked for the Union Pacific Railroad, and they had lived at various places in the West.
Survivors are her husband of Salt Lake City, three sons and a daughter.
Friends may call at the funeral home from 3 to 8 p.m. today.
