George Hammell Cook was a founder of the discipline of scientific agriculture. As a professor at Rutgers College, and later its Vice President, he positioned the school to better serve New Jersey. In 1864 he organized the New Jersey State College for the promotion of agriculture and mechanic arts at Rutgers. In 1974, that school was reorganized as Cook College in his honor. The home he designed and built for his family, now known as Demarest House (1867), is on the National Register of Historic Places, and can still be seen at 542 George Street, New Brunswick
