With much of the surrounding area still quite rural, Louis acquired several acres of land on the Pinellas- Pasco County line where he enjoyed his true passion of farming. He named his land Pappas Ranch where he and his family enjoyed many years of relaxation away from their demanding restaurant responsibilities. It was on the Pappas Ranch that Louis taught his children the importance of freshness, providing farm fresh products from the ranch to their many loyal patrons.
