Elliot graduated from Harvard College and Harvard Law School. Being shy he found trial work daunting and soon left the profession. He was artistic loving to draw and paint in water colors. He joined his brother Edward Clarke Cabot in Edward's architectural practice, at first helping to run the office and then later designing buildings. He was an early Trustee of Boston's Museum of Fine Arts, helping them acquire s set of plaster casts of famous Greek & Roman statues because he believed the museum would never have enough funds to acquire any originals.

Elliot was also interested in literature. He was a Trustee of the Boston Atheneaum, helped found the Atlantic magazine, and was a close friend on Ralph Waldo Emerson. Elliot wrote the first biography of his friend Emerson.
