George was born Jørgen Johannessen Jørstad, the son of Johannes Jonassen Jørstad and Lisabet Oline Johannesdatter Sørem.

He had eleven siblings: John, Richard, Elmer, Lena, Norman, Annie, Marie, Theodor, Oscar, Harold Joseph, and Inga Sophia.

George married Myrtle Janet Johnson on October 20, 1945.
