Son of Jonathan Parkhurst and Lydia Gilbert Car(e)y.

Father of William B. Parkhurst.

Operated the first tavern in Hastings, and built the first inn there in 1832. The same year, he was a Hastings delegate to the county's Anti-Masonic Convention.

Gilbert's son and daughter-in-law were members of the Baptist Church [presumed to be the Central Square church] and one of the stained glass windows was donated by them. On it is written, ‘Gilbert Parkhurst by William B. Parkhurst.'
