In my opinion -- and I cannot prove it -- Francis was named Francis Drake Jones. His aunt, Maria Antoinette Jones, had married Sir Francis Drake on 13 Dec 1845, two weeks before Francis' birth. No other name really makes sense given the timing.

Aged 2 Months & 1 Day.
Children of William and Catharine Jones.

Note that it says "Children" because Frances D Jones and Winfield L Jones have a single stone.
