Elizabeth Jane Bailey was born September 23, 1842 in Hardway, Hampshire, England. She was the daughter of Francis William and Eliza Smith Bailey.

Elizabeth came to America in 1864 on the Hudson with her brother Walter and sister Ellen. They arrived in New York on August 7, 1864. They came to Utah in the fall of 1864 with the Warren Snow Company. She recorded taking her turn pushing a handcart. The company had animals that were grouped together at night and provided fresh milk. During the day, milk that was left over from breakfast, was placed in a small wooden barrel and secured to a wagon. It became churned into butter by the constant movement of the wagon.

On December 20, 1865, at the age of 23, Elizabeth married George Edgel in Coalville, Utah. George was a young widower. His first wife Mariah Noble Apgood Edgel died in childbirth, along with one of her twins, leaving him with the surviving baby and a young son and daughter from her first marriage. The baby girl was just 4 months old and was being cared for by the Wilkinson family.

Elizabeth raised the 2 oldest children, along with her own in a log cabin in Hoytsville. Work, lack of money, responsibility, illness and death were her constant companions.

At the age of 67, while spending time with her sister Ellen, in Salt lake City, Elizabeth suffered a cerebral hemorrhage. She was paralyzed and lay in a coma for 2 or 3 days. On March 8 1910, at 8:15 in the evening, she died. Her body was placed on the train the next morning by her sons John and William, to be taken home for burial. Elizabeth was laid to rest in the Hoytsville Cemetery beside her four small daughters; Alberta, Harriet Ellen, Clara Alice, and Ruby Leola. She was survived by her husband and sons John, Frank, William, and daughter Mary.
