George Eoff was the son of John Eoff and Lucy Shaw, natives of Kentucky and residents of Tennessee and Arkansas. George was the seventh born of nine children: Elizabeth, Robert M, John W, Joseph Jackson, James, Jonathan, George, Mary Jane and Henry McElmury Eoff. George also had five half-siblings from his father's previous marriage: Isaac L, Samuel, William, Alexander and Margaret (Eoff) Elliott. The family moved from Tennessee to farm in what is now Boone County, Arkansas before 1850.

George married Sarah Francis Ogle, the daughter of John Ogle and Laura Ann Hill October 18, 1863 in Boone County, Arkansas. Their children were Jonathan Eoff, Louraine "Lou" (Eoff) Aufill, Charles H Eoff, Lurissa (Eoff) Carlton, Aaron Eoff, John Eoff, Throna Eoff, Robert Eoff and Nora (Eoff) Kuykendall. George and Sarah moved from Arkansas to Hill County, Texas about 1875 and to Jones County, Texas before 1900.

After his first wife's death in 1888, George married Nancy A McMurry October 17, 1889. When his second wife died in 1901, he married Mary Virginia (Dean) Pace April 18, 1902.

George was a farmer all his life. He served in the Union Army during the Civil War in Company D 2nd Arkansas Cavalry. He was mustered in in Newton County, Arkansas April 21, 1864 and was mustered out with his company August 20, 1865. George died in Anson, Jones County, Texas a few weeks short of his eight-sixth birthday.
