Former Archbishop of the Metropolitan See of Granada, Monsignor José Méndez Asensio was born on March 21, 1921, in Vélez Rubio, Province of Almería, Spain, and was ordained to the priesthood at the age of 25, on April 13, 1946.

Canon of the Chapter of the Cathedral of Almería, spiritual director and later rector of the diocesan seminary of the latter city, Asensio was appointed Bishop of the Diocese of Tarazona by Pope Paul VI on July 22, 1968, receiving his episcopal consecration on the following September 3, from Archbishop Luigi Dadaglio, assisted by Archbishops Angel Suquía Goicoechea and Miguel Roca Cabanellas.

Aged 50 50, Msgr. Méndez Asensio was named Archbishop of the See of Pamplona-Tudela, Navarra, on December 3, 1971, succeeding Monsignor Arturo Tabera Araoz CMF. Successively, he appointed as Archbishop of the Metropolitan See of Granada on January 31, 1978, becoming thus the 43rd Archbishop of the latter see.

During his episcopate, the Archbishop acted as Apostolic Administrator of the See of Almería between 1988 and 1989, aiding Bishop Manuel Casares, whose health was severely declining.

The Archbishop retired from the pastoral government of his see on December 10, 1996, and was succeeded by Msgr. Antonio Cañizares Llovera. He died on Saturday, April 15, 2006, aged 85, at 9.30 am., at the Hospital of Nuestra Señora de la Salud. His body, clad in liturgical vestments, was laid out in state at Granada's episcopal curia. His solemn funeral Mass, presided by Archbishop Javier Martínez, with over 300 bishops, priests, religious and the cathedral chapter concelebrating, was said inside the Metropolitan Cathedral of Granada. Present where also Cardinals Carlos Amigo OFM., and Antonio Cañizares Llovera, of the Metropolitan Sees of Seville and Toledo.

Internment took place inside the named Metropolitan Cathedral of Granada, in the Capilla de la Virgen de las Angustias.
