Cathy was born in St. Louis, Missouri on May 13th, 1968, to James and Cherie Crowe. Cathy graduated from Parkway North High School. She attended Northeast Missouri State University and graduated from Fontbonne University in 1993, with a degree in Dietetics. One of her favorite jobs was waterfront director at the S Bar F Scout Ranch near Farmington, MO. In 1989, she started working as an Administrative Assistant at a company in Clayton, where she met Scott Aalfs, in 1990. They were married in October 1995. She gave cooking and equipment demonstrations while working at Laclede Gas Company. They lived in Sioux City, Iowa for ten years where she worked as a nutritional analyst for Harker's Distribution. Scott and Cathy had three children, Spencer, Remi, and Peyton. They returned to St. Louis in 2006, where she passionately volunteered in the community and raised her children.

Cathy was an avid cooking enthusiast, gardener, and athlete. She loved swimming, kayaking, snorkeling, bicycling, home decorating, and any kind of dog or cat. Recently, she threw herself into learning to play mahjongg, pickleball, and golf. She generously gave her time to the school community, volunteering for field trips and fitting choir members for robes. She worked as the president of the Parkway West Lacrosse Club, where her optimism and energy inspired the team. Camping and hiking were dear to her heart as she loved the outdoors, and she had recently gone on a 160 mile bicycling trip across Michigan with Scott. She was fiercely loyal in every relationship. She would gladly reach out and help any friend or acquaintance, even if their paths only crossed briefly. Most of all she loved spending time with family and friends, and would jump into any new activity or adventure with full abandon and joy.
