Evelyn was born in Bay Shore, Long Island, NY, a daughter of the late Frank and Evelyn M. (Tapasak) Klasek. Evelyn was married to William E. Collins until his passing in April 2019, with whom she celebrated 62 years of marriage. She was a graduate of Seton Hall High School, Patchogue, NY, class of 1954.
Evelyn was a member of St. Jane France de Chantal Catholic Church; Knights of Columbus Lady's Auxiliary Union Council #345, of Easton, where she served as historian, and Lady's Auxiliary of Lindenhurst, NY. Evelyn enjoyed cooking, baking, cake decorating, traveling, gardening, bird watching especially humming birds, reading, walking, hiking, RV camping, the beach, and lighthouses. She was a loving mother and devoted grandmother.
Evelyn is survived by sons, William L. Collins and husband, Steven Markuson of St. Louis, MO, and Kevin G. Collins of Bethlehem; daughters, Karen L. Dietz and husband, Tom, of Bethlehem, Darlene M. Sanderson and husband, William, of Emmaus, Cheryl A. Thatcher and husband, Mike, of Easton, Susan A. Jordan and husband, Mike, of Nazareth, and Marilyn P. Sterner and husband, Jim, of McSherrystown, PA; a sister, Joan M. Scarbeck of East Islip, NY; grandchildren, Johnathon and Amanda Dietz, Elizabeth, Janet and Annmarie Sanderson, Megan Rios and husband, Jon, Emily and Sean Collins, Allison and Steven Thatcher, and Samantha, Danielle, and Cassidy Jordan, and several nieces and nephews. In addition to her husband, she was preceded in death by a sister, Elizabeth L. DiMaggio, and a brother, Frank J. Klasek.
Calling hours will be held on Friday from 6 to 8 p.m., with an additional calling hour on Saturday from 9 to 10 a.m. in Morello Funeral Home, Inc., 3720 Nicholas Street, Easton, PA (Palmer Twp). A Mass of Christian Burial will be celebrated on Saturday at 10:30 a.m. in St. Jane Frances de Chantal Catholic Church, 4049 Hartley Ave., Palmer Twp. Interment will be in Holy Saviour Cemetery, Bethlehem, PA.
