Carol Renee Jarrett was born on August 5, 1959 in Coalgate, Oklahoma. She died in Tulsa, Oklahoma on January 16, 2013 at her home. Carol attended school in Alva, Moore and Norman, Oklahoma. She graduated from Norman High School in 1977. She attended the University of Tulsa and received her Bachelor's and Master's degree from Oklahoma State University.
Carol married Chris Cauthon in Tulsa in May of 1986.
After working at Hillcrest Medical Center for more than 15 years as a Clinical Dietitian, Carol taught nutritional sciences at Oklahoma State University. She was passionate about her teaching and enjoyed riding the "Big Orange Bus" out to Stillwater every day. She inspired many of her students to pursue careers in healthcare.
Carol enjoyed reading, cooking, traveling and spending time with her family and friends.
In 2009 Carol and her husband went to Bolivia to build eco-latrines with Engineers Without Borders. This trip made a lasting impression on Carol and sparked her continued involvement with the organization. In addition, Carol participated in many Susan G. Komen fundraisers.
Carol is survived by her husband, Chris Cauthon; her parents, Milt Jarrett of Tulsa, OK and Phyllis Jarrett of Edmond, OK; her stepmother, Anita McAleese of Tulsa, OK; her brother and his wife, Robert & amp; Jill (Laney) Jarrett of Portland, OR; her sister (and best friend) and her husband, Linda & amp; Jim Moore with their children, Jarrett and Cara of Bartlesville, OK; and other family and friends.
Carol is preceded in death by her brother, John and her sister, Lisa. In lieu of flowers, donations can be made to Engineers without Borders, 4665 Nautilus Court, Suite 300, Boulder, CO 80301
A memorial service will be held 1:30 p.m. Monday at the Tulsa University Sharp Chapel.
