Inventor, Politician. He was a prominent businessman and co-founder of Lawrence and Durland, a cheese manufacturing company in Chester, New York. In 1872 Lawrence accidentally discovered the formula for cream cheese while trying to duplicate the French brand Neufchatel, and was the first to sell it in foil-wrapped rectangular packages. This led to the development of the world-famous Philadelphia Cream Cheese and paved the way for modern day cheesecakes. Although never an aspiring politician, he was elected Mayor of Chester in 1893, when the village became organized under a city charter.
