She is survived by, Son, Paul and wife Sharon (Svihel) May, Chaska; Grandchildren, Kevin and Amy (Canfield) Mayfield, Eden Prairie, Eric and Lisa (Rasmussen) May, Belle Plaine, Paulette and Mike Pulkrabek, Jordan, and Virginia and Brett Stejskal, Shakopee and 14 Great Grandchildren, Lucy Mayfield, David, Derek, Devin and Dylan May, Andrew, Lance and Mallary Anne Ripplinger, Bryanna, Christopher and Alana Pulkrabek, Brittany, Allison and Coleton Stejskal. Two brothers, Waldemar Post, Inver Grove Hts. and Jerome and wife Phyllis Post of St. Cloud, and many nieces and nephews.
She attended St. Boniface School in Cold Spring, MN and was a 1941 graduate of Le Sueur High School. Catherine and Carol P. May were married on October 4th of that same year. Catherine enjoyed crossword and jigsaw puzzles, reading, gardening, cooking and baking. She worked at Green Giant, Nelson's Bakery, and did catering, decorating beautiful wedding cakes, cookies, etc. for numerous special occasions and celebrations. She was a volunteer at St. Anne's School for seven years, assisting children in the various academic areas.
