Katherine Elliott Cook, "Katy" beloved wife and mother, died at 1:30pm from complications of Parkinson's. She passed peacefully at her home on November 8, 2016, surrounded by family and friends. Born in Logansport, Louisiana on September 1, 1928. She was the youngest daughter and fourth child born to Russell Elliott and Modena Magness Elliott. Growing up in the countryside of Louisiana, Katy shared many beautiful and colorful stories of rural life in the 1930's. The family moved to Beaumont in the 40's and in 1951 Katy met young sportswriter, Dan Cook. When their eyes met it was love at first sight. Dan and Katy were married in Houston, Texas on November 24, 1952. Immediately after the wedding they moved to San Antonio, Texas where Dan begin his new job as Sports Writer for the San Antonio Express-News Newspaper. Katy lived an exciting life with Dan. She was his lucky charm in life. Katy was preceded in death by her loving and devoted husband Dan on July 3, 2008 after 56 wonderful years of marriage. She is survived by her three children, daughter, Marie Cook, son, Dan Cook and daughter, Alice Ashton. Their spouses, Tom Meinhausen, Laura Cook and Doug Beauchamp; grandchildren Brad Bates, Britney Ashton, Dani Cook and four great-grandchildren along with many loving and devoted friends. The Cook family wishes to acknowledge the wonderful and caring people who helped care for Katy over the past 5-years: Grace, Krizel, Karen, Sammy, Adela and Clarissa Charles, who also brought her Holy Communion each Sunday. In lieu of flowers, please consider making a donation to the Parkinson's Foundation. Viewing will be on Monday, Nov.14, 2016 from 6pm-8pm at Sunset Memorial, 1701 Austin Highway, San Antonio, with funeral services being held on Tuesday, November 15, 2016 at Noon.
