Ken was a devoted Husband and Father. Ken earned Bachelors and Master's Degree, Economics, from Baylor College, Waco, Texas, earning his Ph.D. in Agricultural Economics from Montana State University in 1960. In his career he served as Full Professor of Economics and Academic Dean with Fort Lewis College in Durango, Colorado and Associate Professor with Cornell University, Ithaca, New York. Later he joined the United States Agency for International Development, U.S. Department of State, first as a contractor starting January 1967 in Monrovia, Liberia, then as a full time employee of USAID.
Dr. Eubanks then served in Pakistan, Ethiopia, Philippines and Kenya retiring a top ranked Foreign Service Officer (USAID) in 1980. At that time Ken and Irene bought citrus properties outside Edinburg, Texas and began to cultivate citrus. He loved history books, Baylor football, Yogi Bear, Alvin and the Chipmunks, westerns, ice cream, chocolate cake, corn bread. Especially he loved to travel, see and experience new places with his family. Ken was and always will be a Son of the American Revolution.
Graveside services will be 2:00 PM at the Rio Grande Valley State Veterans Cemetery in Mission, Friday, February 5th, 2016. May he Rest in Peace.
