Joseph Hite was most likely born March 20, 1835 in Marion County, Ohio, although the year according to census records varies from 1830 to 1836. He was the fifth of 13 children born to James Hite and Ann Nichols. Biographical information of siblings places the family in Marion County during this period. Prior to 1840 the family moved to De Kalb County, Indiana, where Joseph married Mary Watson on March 1, 1855.

On August 28, 1862 Joseph enlisted in Company H, 108th Illinois Infantry as a teamster, along with his brother, Madison, and his cousin, Simon P. Hite. He was mustered out as a wagoner on August 5, 1865. After the Civil War, he removed to Monona County, Iowa, where his wife, Mary, apparently died between 1867 and 1870. On September 10, 1870, he married Emma (Dudley) Norwood, who was also recently widowed. They moved to Oregon sometime between 1875 and 1878.
