Jay was the son of the late Everett C. and Josephine (Mosby) Underwood.
Jay married Catherine Ann Cross on August 29, 1958. They were blessed with three children, Kathy Jo, John and Kristine. Jay owned Underwood Constructors and Catherine’s Catering for many years.
In addition to his parents, Jay was preceded in death by his wife, Catherine Underwood in 2006; his son-in-law, Rodger Harrington; his brother, Robert Underwood; and his sisters, Kay Bredfeldt, Sally Basham, Eleanor Hospodka, along with his infant sister, Barbara Jo.
Jay is survived by his three children, Kathy Harrington, John P. (Jane) Underwood & family, Kristine Birchard; his granddaughter, Ashleigh Harrington; his grandson, Joseph Birchard; his brother, William Underwood & family.
Jay performed many acts of kindness, received awards, and was a pillar of the Council Bluffs community.
