In 1944 she married Earl Schenk and lived in Mt. Sterling for a short while and then moved to Rural Liberty. She was a beloved mother to four children: Leon Schenk of Liberty; Marvin Schenk and his wife Nicola, of Liberty; David Schenk and his wife Sandy of Fowler and Rev. Judith "Judy" Taylor and her husband Richard of Quincy, Illinois.
Her 7 grandchildren were the love of her life: Curtis Schenk and his wife Dawn of Fowler, Illinois; Jeff Schenk and his wife Patty of Quincy, Alexander Taylor and his wife Robyn of Quincy, Nicholas Taylor of Quincy, and Daniel, John and Chris Schenk of Liberty.
She was preceded in death by her husband, Earl Schenk in 1962 and her parents Frank and Clara (Meyer) Knuffman of Rural Liberty, Illinois and a sister Dorothy Rossmiller also of Liberty. A sister Irene Baucom and brother, Bill Knuffman also survive.
Caroline Schenk helped start the Liberty School Lunch Program in 1966 and retired after 32 years in 1988. She was a member of St. Brigid�s Catholic Church and past Officer and member of the Altar and Rosary Society; a former member of the Adams County Homemakers Extension.
Known for her kindness, sense of humor and generous nature she will be remembered fondly for her excellent pies, rolls, cookies, candy and culinary skills. She received 97 birthday cards last year for her 85th birthday; she was a friend to all and loved by many.
Funeral services will be held on Monday, July 12, 2010 at 10:00 AM in St. Brigid Catholic Church. Interment in St. Brigid Cemetery. Visitation will be held on Sunday evening from 4:00 until 7:00 PM at the Duker & Haugh Funeral Home in Quincy. For Caroline, the family wishes to plant a Memory Garden at Liberty School and St. Brigid Church. Therefore, Memorials may be made to Liberty School where she lovingly served so many children over the years, to St. Brigid Catholic Church to which she was so devoted or may also be made to the Quincy Blessing Foundation for Hospice.
