Israel Cox was born about 1736 probably in New Jersey or possibly in Delaware. He was the son of Ephraim and Maria Savoy Cox. Isreal married Mary Quick on 3 July 1765 probably in Rowan County NC.

I have a transcribed copy of the bible of David Cox, who was the son of Israel and Mary Quick Cox. The marriage of Israel and Mary is listed as follows in the bible:

Israel Cox and Mary Quick were married July the 3rd and year of our Lord 1765.

Their children are listed as follows:

David Cox was born August the 27th day and year of our Lord 1766.
Ephraim Cox was born February 19th day Anno Domini 1769.
Benjamin Cox was born February 12th day Anno Domini 1771.
Benjamin Cox departed this life August the 5th day 1784.
Moses Cox was born Sept between 25th & 26th day 1773.
Susannah Cox was born December the 16th day Anno Domini 1778.

The bible also states:

Ephraim Cox, Sen. departed this life the 3rd of June 1771.

Since the death of Ephraim Cox Sr is recorded in the bible of David Cox and Israel Cox named his second born son Ephraim, I believe Ephraim Cox, Senior must have been Israel’s father.

The following are excerpts from an article entitled "Moses Cox Family Records" which was published in the Winter 1972 edition of "Ansearchin' News":

"Israel and Moses Cox's first purchase of land in Rowan County (now Davidson) was recorded in December 1761. Moses, in his will drawn January 20, 1788 [sb 1778], names wife Sarah, three sons and four daughters, all unnamed, with his brother Israel as executor. Israel drew his will May 26, 1788 [sb 1778], naming his wife Mary, son David and other sons under age, with Benjamin Davis and Moses Park as executors.

A cemetery in Cabin Creek area, on land owned by Israel Cox, has about 35 graves with head and foot stones, but the only marked graves were: Israel Cox died June 3, 1788 [sb 1778], aged 42 years; David Cox born Aug 27, 1766, died June 15, 1840, 73 years; Martha Cox born Sept. 22, 1764, died Oct. 17, 1822, age 58 years (records show that David Cox married Martha Cole April 5, 1788 in Rowan County, NC); William Cox born April 5, 1792, died Nov. 18, 1840; Dr. Chas. Cox died Sept. 25, 1828, age 26 years; Oma Scarlett, born 1821, died Oct 13, 1881, aged 60 years."

Here is my transcription of the will of Israel Cox which is clearly dated 1778. Also, note that he mentions Mons Park as an executor of his will. Mons is the Swedish version of Moses:
