My mother had devout religious beliefs - she lies in wait of the sure and certain hope of the Resurrection. As per her own handwritten words in the back of her Bible (words I think should have been placed on a headstone for her), are these:

"Ruby Coursey is my name.
America is my nation.
Williamson County my dwelling place.
The New World my expectation.
When I am dead and all my bones are rotten, this Good Book will tell my name when others have forgotten. Ruby Coursey, Leander, Texas."

* She married Amos R. Coursey from Llano Co.
* Children: Ross & Debra.
* She worked at the Leander School for many years in several capacities.
* D.O.D. on marker (1966) is incorrect. Correct yr is 1967.

She had a hard live, all her life, but handled whatever was dished out to her as best she could at the time. She did whatever was necessary to protect & provide for her children - even if it meant working herself to death to do so. Which she did right up until the end.

She was a great cook, everyone loved her cooking. She was known for her biscuits & gravy, tender venison, and the melt-in-your-mouth praline candy she would make for me to take to school for all those bake sale events. No matter how many times I've tried to duplicate her recipes they've never come out quite right!
