Edith Eichstadt was born on Sept. 17, 1927, to Paul and Emma (Meyer) Scheibe at Wolsey. She was baptized and confirmed at St. John’s Lutheran Church, where she was a lifelong member. She taught Sunday school and was active in the LWML for many years. She attended Weeks school in Allen Township, for 8 years and graduated from Wolsey High School in 1945. At age 17, Edith began working as a secretary for Northwestern Public Service and continued working there for 2 ½ years.

On Oct. 21, 1947, Edith married Martin Eichstadt at Watertown, South Dakota, and they began their life together on their farm west of Wolsey, where they enjoyed 65 years, with the exception of three years spent in Colorado Springs, Colorado. In October 2012, Edith and Martin moved to SunQuest Village, where she made many friends.

Edith enjoyed playing cards, bingo, doing crossword puzzles, and watching the Minnesota Twins. She and Martin also enjoyed many years of fishing on the Missouri River and spending 20 winters in Arizona.
