Of Crystal. Carol was born to Jane and Peter Mattson and grew up in St. Paul with sisters Kay and Edie. She married Jim Hess on July 25, 1942. After WWII and a brief time living in St. Paul, Carol and Jim moved to a farm near Mora, MN, where Carol was active in the school's PTA and her church's Sunday School, and became adept at preserving the bounty of the family's large garden. In 1963 the family moved to Crystal, MN. Carol worked off and on and attended college and sold real estate for a few years. The constant in her life was her devotion to family. She was preceded in death by her parents and sisters, and her beloved oldest son Jim.
