Joseph was born in Malvern, Carroll County, Ohio, the son of Matthew and Margaret (Knox) Carson. His parents were Irish immigrants who married in Carroll County. His family removed to Porter Township, Porter County, Indiana by 1861, where his father was a farmer.
Joseph was the principal of the Hebron school for two years, and subsequently went onto graduate from the Department of Medicine at Butler University in Indianapolis. He returned to Hebron where he was a physician.
He married Elizabeth Cain on April 22, 1880 in Porter County. The couple had a daughter Theresa.
