George was born in Fallsburgh, New York, in Sullivan County. He was the son of Martin Gillette and Anna (Braun). He pioneered to Michigan with his younger brother, Verdine H. Gillette, where he was married to Elizabeth. He enlisted at the age of 38 and served his country with Company H in the 9th Michigan Infantry during the Civil War. Not much else is known of him. On his stone, the 'e' is dropped from the end of Gillette.
