As a young man, Jenkins served in the 52nd Regiment of the Maryland National Guard and in 1862 he left his father's business to serve as a private in the Confederate Army, First Maryland Cavalry, Company C. At the time of his death he was one of the oldest Confederate veterans in Maryland.

After the death of his father in 1882, George Jenkins became director of the Savings Bank of Baltimore and the Merchants-Mechanics' National Bank. When George's brother Michael died, George became a director of the Atlantic Coast Line, the Louisville and Nashville Railroad, and the Safe Deposit and Trust Company. Jenkins was also a director of the United Railways, the Baltimore and Ohio Southwestern Railroad, the Canton Company, the Consolidation Coal Company, and the Maryland Life Insurance Company.

George Jenkins was the founder of Bon Secours Hospital and contributed the funds necessary to build a science building at Loyola College. In 1924 he was recognized for his charitable giving by Pope Pius XI and was made a Knight of St. Gregory. At his death he was worth over $5 million and he left over $400,000 to charity, including $230,000 to Bon Secours.

George Jenkins' family estate, "Seven Oaks", is now the site of the Stevenson University Greenspring campus.
