Indianapolis - Mary Ethel (Smith) Frederick, 83, died January 9, 1996. She was born March 28, 1912 in Lasalle Parish, Louisiana, to Dorus and Emma Smith. She married James Leo Frederick, Sr. He preceded her in death in 1973. Mrs. Frederick, with her late husband, owned and operated restaurants in Plainfield since 1941 including Frederick's Hospitality House Cafeteria from 1959 to 1969. In 1965, with her husband and E.M. and Shirley Cobb, she founded Waffle House of Indiana. She served on the board of directors for 29 years as secretary and chairperson, retiring as chairperson emeritus in 1994. Frederick was a member of Plainfield Christian Church and Alpha Chapter of Delta Alpha Gamma sorority. Survivors include a daughter, Geraldine Frederick of Indianapolis; a son, James L. Frederick Jr of Indianapolis; two sisters, Bonnie Smith of Lakeland, Florida, and Lillian Holloway of Pollock, Louisiana; and three grandsons. Funeral services were conducted January 12 at Hall-Baker Funeral Home in Plainfield with the Rev Steve White officiating. Burial was in Maple Hill Cemetery in Plainfield. Memorial contributions can be made to Tom Bruce Memorial Scholarship Fund or Alpha Chapter of Delta Alpha Gamma Sorority Scholarship Fund, in care of Hall-Baker Funeral Home.
