US Congressman. He attended local schools and successfully farmed a household he called "The Hook." He served in a variety of local government positions and was an officer of the Schoharie County Agricultural Society. Borst was also a militia officer and served in various command positions and on the staff of Governor William C. Bouck. He was elected to the US House of Representatives as a Jacksonian in 1828 and served one term, 1829 to 1831. After leaving Congress he returned to his farm and continued to be active in local government, including serving as a member of the committee that oversaw construction of the county's first almshouse and poor farm in 1838.
