I had the same issue with the Earley surname. I also kept seeing Early and Earley being used interchangebly with the ancestors I was researching until I had settled on Early. The grave threw me in for a loop, but I'm 100% certain this is the grave of Mary Fox's parents. Since they were both illiterate, the spelling may have always posed a problem and the children would have learned whatever their teacher taught them to spell which could have been different for different children. Now that I look back, all three of Mary's known siblings use the Earley variant in their death certificates and tombstones so it should be the correct one.
